The St. Regis Jakarta introduces Solène, a new culinary destination bringing the luminous spirit of la cuisine du soleil to Jakarta. Conceived as an immersive interpretation of Southern French Mediterranean dining, the restaurant channels the warmth of Provence and the understated glamour of the Côte d’Azur into a refined contemporary setting shaped by coastal elegance, seasonal flavors, and Riviera ease.

Rooted in the Southern French philosophy of ingredient-driven cuisine, Solène celebrates simplicity, conviviality, and the art of leisurely dining. Here, fragrant herbs, pristine seafood, olive oil, and vibrant seasonal produce are composed into a sensorial journey that feels both transportive and intimate—evoking the romance of sun-drenched Provençal afternoons within the polished atmosphere of The St. Regis Jakarta.

At the helm is Chef Maxime Sacchetto Foglia, whose culinary journey spans several distinguished kitchens across Paris and Los Angeles, including Sofitel Le Scribe Paris Opéra, Hôtel de Crillon, A Rosewood Hotel, and Four Seasons Hotel Los Angeles at Beverly Hills. His culinary approach balances classical French technique with the relaxed sophistication and generosity synonymous with Mediterranean dining culture.

The menu unfolds through a collection of contemporary Southern French dishes that express Solène’s coastal identity with finesse. Signatures such as Tartine de Tomates et Mozzarella de Bufflonne, Tataki de Thon, Crudo de Sériole, and Daurade Rouge à la Vierge de Tomates highlight the purity and freshness of Mediterranean ingredients, while Chou-fleur Rôti introduces a thoughtful plant-forward element. For dessert, La Tropézienne offers a timeless Southern French finale. Each plate is designed for both elegant individual indulgence and convivial sharing around the table.

Beyond the cuisine, Solène extends its Riviera-inspired narrative through interiors imbued with understated coastal refinement. Mediterranean-inspired artworks, crisp white linens, and warm ambient lighting create an intimate dining room where meals unfold unhurriedly and conversations linger deep into the evening.
