For years, The Fountain Lounge has been part of Jakarta’s social rhythm—a polished meeting point overlooking the city’s iconic Bundaran, where afternoon tea, good conversations and leisurely gatherings have made it one of the city’s enduring addresses.

Now, the classic ritual takes on a fresh expression with From Madagascar to Java, an exclusive dessert created by Executive Pastry Chef Ludovic Audaux to mark the 40th anniversary of Valrhona’s celebrated Guanaja chocolate.

At its heart is Guanaja 70%, Valrhona’s pioneering dark chocolate couverture introduced in 1986. Celebrated for its intensity and aromatic complexity, it becomes the canvas for Chef Ludovic’s exploration of Java, bringing French pastry precision into dialogue with distinctive Indonesian flavours.

Complementing the dessert, Fountain Lounge has introduced a new high-tea set menu, thoughtfully crafted with harmonious pairings for its selection of premium teas. From umami-led and classic black teas to Earl Grey and other aromatic expressions, each pairing brings a fresh dimension to the afternoon tea ritual.

From Madagascar to Java unfolds through layers of texture and flavour: airy Guanaja mousse, flowing chocolate crémeux and refreshing Guanaja sorbet meet Javanese coffee namelaka, Indonesian palm sugar caramel, fresh cocoa fruit and vanilla. A cocoa nib and hazelnut croustillant adds delicate crunch, while a chocolate tuile shaped like a cocoa leaf completes the composition.

This limited-time creation is a sensorial journey connecting the heritage of Guanaja with the rich culinary soul of Java.

“From Madagascar to Java is a celebration of two worlds that inspire me deeply,” says Chef Ludovic. “Bringing its character together with the flavours of Java allowed me to create something personal, respectful of its heritage, and expressive of the destination I now call home.”
