A Gastronomic Passage from Kashgar to Istanbul

Sugar & Spice at InterContinental Jakarta Pondok Indah,  Saturday evenings now unfold as an immersive gastronomic passage through the ancient Silk Road. Commencing from 23 May 2026, the restaurant introduces The Silk Road, a newly reimagined dining experience that traces the legendary trade route from Kashgar and Samarkand to Tabriz and Istanbul through cuisine, aroma, music, and theatrical tableside presentations.

The Silk Road transforms Sugar & Spice into a multi-sensory journey inspired by the civilizations that once shaped one of history’s greatest cultural exchanges. Guests are welcomed with scented oshibori infused with earthy wood notes before moving across four culinary chapters, each representing a distinct destination along the ancient route.

The journey begins in Kashgar with the Royal Da Pan Ji, a refined interpretation of Xinjiang’s iconic Big Plate Chicken paired with mint-infused Pu-erh tea. In Samarkand, delicate plant-based creations and fermented milk traditions reflect the elegance of Central Asia’s Timurid era. Persia arrives through Tabriz with the dramatic Caravan Silk Fire Box — a guéridon-served presentation of Persian-inspired grills accompanied by the refreshing Sharbat-e Sekanjabin. The experience concludes in Istanbul through the Bosphorus Seafood Experience, where guests personalise seafood preparations tableside in a theatrical finale inspired by the city’s historic bazaars and maritime culture.

Additional highlights include the Silk Road Carving Atelier featuring fire-grilled Tomahawk and clay-oven roasted lamb, a lively Kashgar Skewer Market, and desserts layered with saffron, pistachio, and pomegranate — ingredients long associated with the trade routes that connected East and West.

The Silk Road at Sugar & Spice reframes dining as cultural storytelling: a gastronomic expedition where every dish carries the memory of movement, encounter, and exchange across continents.
