In tribute to the legacy of the legendary Chef Joel Robuchon, holder of an astonishing 32 Michelin Stars – the most worldwide, ALICE at The Langham Jakarta proudly presents an exclusive three-day gastronomic event featuring an exquisite menu crafted by the acclaimed 2 Michelin-star Chef Thierry Karakachian. Chef Karakachian honed his exceptional skills alongside Chef Joël Robuchon, notably excelling as the head chef at the prestigious Atelier Joël Robuchon Étoile in Paris, where he earned his 2nd Michelin-Star. With his wealth of experience, he is the perfect maestro to orchestrate this extraordinary affair.
Chef Thierry Karakachian boasts a rich Mediterranean heritage. Born in the South of France and raised amidst the splendor of the sea, he develop a profound appreciation for the freshness and authenticity of natural ingredients. In 2008, he had the privilege of joining forces with Chef Robuchon, embarking on a fifteen-year journey of intensive training and learning. Along the way, he garnered invaluable expertise from culinary hotspots like Monaco, Nice, Paris, and Tokyo, while also contributing to the success of several of Chef Robuchon‘s renowned establishments. Notably, Chef Karakachian achieved mastery in Japanese cuisine in 2020, and earned his first Michelin star at Montaigu in 2016.
ALICE is delighted to showcase Chef Karakchian‘s culinary prowess from November 9th to 11th, 2023. Guests will be treated to a special set and à la carte menu available for lunch (11 AM to 2 PM) and dinner (6 PM to 10 PM). The menu will feature some homage to Chef Joël Robuchon’s signature dishes, along with the creation of Chef Karakachian’s own specials including a touch of French and Japanese cuisine. Appetizer:
Salmon Tartare with Caviar and Shiso Tempura Chips.
Second Course:
Steamed Langoustine and Truffle Ravioli with Green Cabbage.
Fish:
Caramelized Black Cod with Java Black Pepper, Pokchoy and Coconut Emulsion.
Meat:
Wagyu Beef Sirloin with Eggplant Pillow, Tomato Provencale and Potato purée.
Desserts:
Exotic Fruits, Mango Coulis, Yuzu Granite, Prosecco Valdobbiadene or Valrhona Gianduja Chocolate, Cacao Sorbet, Roasted Cashew.

Steamed Langoustine and Truffle Ravioli with Green Cabbage. Spaghetti with Seasonal Black Truffle and Parmesan Cheese.
Main Course:
Caramelized Black Cod with Java Black Pepper, Pokchoy and Coconut Emulsion Wagyu Beef Sirloin with Eggplant Pillow, Tomato Provencale and Potato purée. Boston Lobster with Romaine Lettuce, Mozzarella, Avocado and Curcuma Dressing.
Dessert:
Exotic Fruits, Mango Coulis, Yuzu Granite, Prosecco Valdobbiadene. Valrhona Gianduja Chocolate, Cacao Sorbet, Roasted Cashew.
