A New Chapter of Modern British Refinement Unfolds at The Crown

The Crown by Kirk Westaway at Fairmont Jakarta enters a new phase of refinement with the return of its two-Michelin-starred namesake chef, who visited Jakarta from 26–29 November 2025 to realign the restaurant’s culinary direction. Known for his modern, produce-led interpretation of British cuisine, Westaway’s presence underscores The Crown’s commitment to a chef-driven dining philosophy—one rooted in technique, seasonality, and the quiet sophistication of flavour.

For this special moment, a select circle of esteemed media were invited to savour the refreshed degustation menu and meet the acclaimed chef himself. What awaited them was a tasting journey that was not only visually captivating but profoundly delectable, each dish crafted with precision, purity, and a sense of gentle surprise.

The experience opened with an elegant quartet of snacks: Beetroot Meringue, Goose Mousse, the playful Fish and Chips, and a delicate Cheese Pancake—a signature that melds technique with whimsy. This was followed by the celebrated Leek and Potato, a silken, cloudlike interpretation that remains one of Westaway’s most poetic expressions of modern British comfort. A refreshing Heirloom Tomato course brought brightness, before the arrival of Halibut in Cider, elevated with freshly shaved Alba White Truffle specially brought by the chef. The main course, Wagyu Tenderloin, arrived with the quiet confidence of perfect execution. A beautifully crafted Fruit Tea transitioned diners into dessert: the beloved Pineapple Trifle, followed by the refined trilogy of Final SweetsBlood Orange Fruit Paste, Cherry Bakewell, and a Chocolate & Mint Bonbon.

“As The Crown continues to grow, our focus is on creating food that is thoughtful, expressive, and rooted in technique,” Kirk said. “Jakarta has such an appreciative dining audience, and we want every menu evolution to reflect the best of British seasonality while remaining inviting and modern.”

In parallel with the menu refinement, The Crown is developing new experiential programs, including a plating and technique masterclass first conducted internally during Westaway’s visit. Plans to open similar sessions to the public are underway, offering guests a deeper connection to the craftsmanship behind the restaurant’s signature dishes.

The Crown continues to strengthen its position as Jakarta’s destination for modern British gastronomy—elegant, evolving, and crafted for lasting impact.
