Suspended above the city skyline on the 63rd floor of The Langham, Jakarta, Morimoto Jakarta unveils a rarefied dining experience: Chef’s Table – An Omakase Odyssey, a 14-course culinary journey curated by Executive Japanese Chef Juntaro Fujimura.

Renowned for his disciplined technique and artistic restraint, Chef Juntaro Fujimura—whose two-decade career has traversed esteemed kitchens in Tokyo and Kyoto—composes each course as a sensory vignette. At the heart of this omakase is not just the food, but the dialogue between flavor and form, past and present.

The journey begins with a decadent Foagura Chawanmushi, delicately infused with umadashi and foie gras, setting the tone for an evening defined by subtle indulgence. The Chef’s Sashimi Selection follows, a pristine study in temperature and texture. Arasuka Taraba Kani offers crisp Alaskan king crab tempura, elegantly paired with truffle-scented soba and citrus-kissed sauces. Amadai Uroko Yaki, with its crackling tilefish scales and warm dashi, reflects a masterful touch.

The centrepiece: Miyazaki A5 Wagyu Robata Yaki, grilled to perfection and accompanied by shishito and wasabi pepper sauce—bold, nuanced, unforgettable. The evening culminates in a handcrafted sushi course and a gentle closing with Tome Wan miso and Kanmi, a delicate composition of mango iced mochi, passionfruit, and coconut crumble.

Guests may enhance their experience with two bespoke beverage pairings: a refined alcohol journey featuring sake, Japanese gin cocktails, and curated wines (IDR 1,198,000++), or a thoughtfully non-alcoholic flight of green apple and shiso, smoked oolong, and yuzu-coconut cream with Yakult foam (IDR 598,000++).
